CRITICAL: Do not overbake your cake. A larger surface area bakes faster—remove it as soon as a toothpick inserted in the center comes out clean.
Rest: After removing the cake from the oven, let it rest for 10 to 15 minutes to release excess steam, then cover it with aluminum foil and let it rest for 1 to 2 hours, or until it comes to room temperature.
Mix the Dough
Once the cake has cooled completely to room temperature, break it into pieces and place them into a stand mixer fitted with the paddle attachment.
Mix on low speed for 3 to 5 minutes until the pudding-enriched cake crumbles down into a smooth, pliable Play-Doh consistency.
Gently fold in the 1 cup of crushed Nilla Wafers by hand until evenly distributed throughout the dough.
Portion & Shape
Knead the dough for a few minutes by hand to give it the final consistency it requires.
Roll the dough flat using 5/8-inch guides to ensure consistent depth.
Melt 80%–90% Sweet Shop Melts Ultra White with 10%–20% Stover Deluxe Melts until smooth, then stir in 1 drop of yellow liposoluble food color for a light banana-yellow shade.
Place the bowl of melted yellow coating directly onto your food warming mat set to hold at the target temperature.
Check the coating with a laser thermometer to confirm it stays steadily within 92°F–98°F.
Dip the tip of a treat stick into the melted coating, then insert it into the rolled-out cake cutout (almost to the top).
I use the stick jig tool for precise, centered placement.
Fully dip the cake pop into the yellow coating. Apply the hand massager to your wrist for a quick-drip vibration to smoothly shed excess coating.
Decorate & Set
Lay the pops flat on a flat surface so that toppings and drizzled lines do not slide off while setting.
Melt the cream cheese dollop coating blend (50% Ultra White + 40% Cream Cheese Melts + 10% Deluxe Melts).
Add a soft blob/dollop of the white cream cheese coating mixture right on top of the yellow base.
While the cream cheese dollop is still wet, sprinkle crushed Nilla Wafers directly over the top so they adhere securely.
Allow the coating and dollop to set completely before packaging or serving.
Pro Tip: Why Sour Cream & Deluxe Melts?
The Fat Ratio Sweet Spot: Adding dry instant pudding mix helps absorb excess liquid. The additional 2 tbsp of water prevents the dough from becoming dry or crumbly, while the ⅓ cup sour cream + 2 tbsp vegetable oil ratio maintains a rich, pliable texture without making the dough greasy.
Deluxe Melts Advantage: Blending 10%–20% Deluxe Melts into your Sweet Shop Ultra White coating thins the melted chocolate naturally, achieving an effortless, ultra-smooth shell at 92°F–98°F without needing added paramount crystals or oil.
Pudding Mix Mixing Time: Because instant pudding contains starches that activate under agitation, mixing for 3 to 5 minutes on low allows the cake to pull together into a smooth Play-Doh texture effortlessly.
Nilla Wafer Crunch: Fold the crushed Nilla Wafers into the dough by hand after mixing, so the paddle attachment doesn’t reduce them to powder.
